Vegan Chili 95 cents per Serving: And it's good for you!

I am always looking for a way to feed my boy with out breaking the bank. And if you have a Vegan in your home they will love this recipe.

2Tbs oil

1 onion chopped

2 cloves of garlic

1 can of black beans 15.5 oz

1 can of kidney beans 15 oz

1 can cannellini beans 15 oz

1 can 14.5 oz rotel tomatoes

1 pk of taco seasoning

1 tsp sugar

2 carrots, grated

1/2 cup of water

cilantro and sour cream are a nice touch but optional

Heat oil in your pot over mediun heat.

Add onion and garlic cook 5 minutes, stir in beans and tomatoes.

Add 1/2 cup of water, taco seasoning mix, and sugar:

bring to a boil, reduce the heat to medium -low

cook until the broth thickens about 20 minutes

Now add the grated carrots and if you like some sour cream and cilantro.

This makes four servings.

It will go a little farther if you serve it over crusty rolls of toasted hamburger buns

Grandma Leona's Cabbage Rolls

My grandma made the best Cabbage Rolls.
Rest her soul, she been gone for awhile. She is deeply missed...
I remember when I was pregnant with my first child, she would make these and a cornmeal dumpling she called naked boys, she made them every time I said I as craving them. I can't tell you how many times that was.
Now that I am a grandma I understand they were the best, because her secert ingredent was a grandma's love.
She added the to every recipe she cooked for her family.
Cabbage Rolls are made with cabbage leaves filled with ground beef and rice, with tomato sauce.
Ingredients:
12 cabbage leaves
.
Filling:
1 pound ground beef You could use ground turkey
3/4 cup cooked rice
1/2 cup finely chopped onion
1 egg
2 teaspoons salt
1 teaspoon pepper
1/2 cup milk
.
Sauce:
1 cans (8 ounces ) tomato sauce
1 can (14.5 ounces) diced tomatoes, undrained
3 tablespoons sugar
2 tablespoons vinegar
1/2 cup water
2 tablespoons cornstarch mixed with 1/4 cup cold water
Preparation:
Drop cabbage leaves into boiling salted water; cover and cook for 3 minutes. Drain well. For filling, combine ground beef, rice, onion, egg, and salt, pepper, and milk. Mix well and divide into 12 portions. Place a portion into the center of each cabbage leaf. Roll leaf around filling; fasten with toothpick. Place in a baking dish. For sauce, combine tomato sauce, tomatoes, sugar, vinegar, and 1/2 cup of water and pour over cabbage rolls. Bake covered in a preheated 350° oven 40 to 45 minutes. Remove rolls and discard toothpicks. Place pan with juices over medium heat or transfer the juices to a saucepan and place over heat; stir cornstarch and water mixture into the sauce; bring to a boil and cook until thickened.
Recipe for cabbage rolls serves 6.

Casey's Favorite Pumpkin Bread

October will be here soon.
I can get through the fall with out a slice of pumpkin bread.
Don't turn up your nose, until you try it, I think that's what my momma always said.
Recipe
4 eggs
3 cups granulated sugar
1 cup peanut oil
1/3 cup water
1 30 oz. can pumpkin pie filling
3 1/2 cups all purpose flour
2 tsp. baking soda
1 1/2 tsp. salt
1 tsp. ground cinnamon
1 1/2 cups (8 oz.) chopped dates
1 cup chopped roasted peanuts or you can use Walnuts Or Pecans
1. Preheat oven to 350 degrees. Grease and flour three 9-inch loaf pans. In large bowl, beat eggs slightly. Gradually stir in sugar, oil, water and pumpkin. Add in flour, soda, salt and cinnamon and mix well. Stir in dates and peanuts. Pour 1/3 of batter into each loaf pan. Bake for 1 hour or until bread pulls away from sides of pan. Cool in pans on wire rack for 10 minutes, and remove from pan and cool completely on rack. Makes
3 loaves
If you have any of those mini loaf pans, use them. You will put a smile on your friends faces by sharing a loaf.
