2Tbs oil
1 onion chopped
2 cloves of garlic
1 can of black beans 15.5 oz
1 can of kidney beans 15 oz
1 can cannellini beans 15 oz
1 can 14.5 oz rotel tomatoes
1 pk of taco seasoning
1 tsp sugar
2 carrots, grated
1/2 cup of water
cilantro and sour cream are a nice touch but optional
Heat oil in your pot over mediun heat.
Add onion and garlic cook 5 minutes, stir in beans and tomatoes.
Add 1/2 cup of water, taco seasoning mix, and sugar:
bring to a boil, reduce the heat to medium -low
cook until the broth thickens about 20 minutes
Now add the grated carrots and if you like some sour cream and cilantro.
This makes four servings.
It will go a little farther if you serve it over crusty rolls of toasted hamburger buns
